Pandan cake

I grew up with this cake - Pandan cake. Screwpine pandanus (pandan) is a type of tree that grows in tropical areas of Asia. Pandan leaves have a sweet, unique flavor that is commmonly used in Southeast-Asian countries to enhance both desserts and savory dishes. I cannot find fresh leaves here, and did not like the frozen ones... freezing seemed to reduce or cause the loss of the aromatics. I used pandan extract for the cake.

It's not the best looking cake... but it taste like home. The crumb is very moist and fine. The cake itself is fairly airy and light (although definitely not comparable to angelfood cakes).

I baked this to go with our afternoon tea. Hubz has been real busy lately, so I thought he'll need a sweet afternoon snack on weekends.



Lunch for tomorrow. I'm going back to the periodontist to have the stitches in my mouth removed tomorrow... finally~
